Ingredients
For the Shrimp:
1 lb large shrimp, peeled and deveined
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
For the Sauce:
2 tbsp Spicy Garlic Spread
2 tbsp olive oil
3 garlic cloves, minced
1/4 tsp red pepper flakes (adjust to taste)
1 can (14 oz) crushed tomatoes
1/2 cup dry white wine or chicken broth
1 tsp sugar (optional, to balance acidity)
1 tsp dried oregano
1/4 cup fresh basil, chopped (plus more for garnish)
Salt and pepper to taste
Steps
Prepare Shrimp:
Season the shrimp with salt and pepper.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until pink and slightly golden. Remove and set aside.
Make the Sauce:
In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for 30 seconds until fragrant.
Stir in the Spicy Garlic Spread and cook for 1 minute to infuse the flavors.
Add the crushed tomatoes, white wine (or chicken broth), sugar (if using), and dried oregano. Simmer for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
Combine Everything:
Return the shrimp to the skillet and toss to coat in the sauce. Simmer for 2-3 minutes, allowing the flavors to meld.
Stir in the chopped basil and adjust seasoning with salt and pepper.
