Ingredients
For the Chicken:
2 large boneless, skinless chicken breasts (or 4 small ones)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
1/2 tsp garlic powder
For the Sandwich:
4 sandwich buns (brioche, ciabatta, or your preferred type)
2 tbsp Garlic Tomato Basil Spread
1 tbsp butter, softened
4 slices fresh mozzarella cheese
1 large tomato, sliced
1/4 cup fresh basil leaves
1 tbsp balsamic glaze (optional, for extra flavor)
Steps
Prepare the Chicken:
Season the chicken breasts with salt, pepper, oregano, and garlic powder.
Heat 1 tbsp olive oil in a skillet or grill pan over medium-high heat.
Cook the chicken for 5-6 minutes per side until golden brown and cooked through (internal temp 165°F). Remove and let rest.
Toast the Buns:
Spread butter on the cut sides of the sandwich buns.
Toast in a skillet over medium heat until golden and slightly crispy.
Assemble the Sandwich:
Spread Garlic Tomato Basil Spread on both sides of the toasted buns.
Layer fresh basil leaves on the bottom bun, followed by a slice of fresh mozzarella.
Place the cooked chicken breast on top.
Add sliced tomatoes and drizzle with balsamic glaze (if using).
Top with the other half of the bun and serve immediately.
